Description

Brewery Shinshuumeijo inc. famed for their innovative approach to Sake making is founded on over 170 years of Sake production. One of the features of this brewery is that it uses Kokuyounomizu, the softest water in Japan which is a challenge to making Sake!

One of the first breweries in Nagano that created temperature-controlled fermentation and maturation of their sake, the sake develops a much deeper complexity of taste and aroma. Furthermore, they are famous for processing only small batches of rice at a time, which finally leads to a unique result: soft with full body and a balanced umami characteristic.

To date, the brewery has been awarded 21 times in a row with the prestigious gold medal at the national sake awards.
