A Junmai that has been brewed with three times the amount of koji normally used, bottled as it is without adding any further water makes it a rare Genshu Sake. Its flavour is characterised by an exquisite balance between the depth of koji umami and a sweet, aged note. The tertiary aromas of caramelised fruits mingle with the freshness of the cherries and pineapple. Brewed in collaboration with the Food Research Institute this Sake was formulated to deliver the optimum taste and aroma of a Genshu.

OUR TASTING NOTES: Rich fragrance of dark cherries, caramel, soy sauce, baked pineapple, caramelised onion and figs. It has a creamy texture with the luscious sweetness of roasted peach and a savoury umami finish.
FOOD PAIRING: Rustic pizza, Beef stews, Roast Lamb with cherry sauce, Pork sausages and Venison burgers.
