Description
Chief brewer Nakayama Kaho at the Shiga Izumi brewery uses local ingredients in its production in an effort to create sake that is good for the planet too. Hitogokochi rice grown in Kijimadaira, and Yamada Nishiki, grown by the Sake Brewery’s president himself, are used. The water is also from the famous water in Kijimadaira Village, which has been selected as one of the 100 best waters in Japan.
